Moisture content: Kernels must be well-dried to prevent rancidity and mold. EU regulations typically limit moisture content to a maximum of 6.5%.
Purity: Specifications require a high level of purity, with tolerances for foreign material (e.g., shell fragments) often at 0.05–0.2%.
Defect tolerance: Grades set specific tolerances for various defects.
Serious defects: Decay, rancidity, insect damage, or mold.
Other defects: Scratches, gum, brown spot, or discoloration affecting more than 25% of the surface.
Splits and broken: In raw, whole almond grades, the percentage of split and broken kernels is controlled.
Taste and smell: Kernels must have a characteristic sweet flavor and be free from any off-flavors or foreign smells.
Food safety: Imports to the EU must comply with strict food safety regulations, including maximum limits for aflatoxins and pesticide residues.
