Bakery wastes are a combination of different wastes, their composition is thus highly variable (McGregor, 2000). Bakery wastes are mostly breads removed from the food market as they become unsellable after only 24 hours, but they can also consist in any other ingredient like dough, flour, sugar and other edible ingredients, such as icing, burnt or broken product.
