- Restaurant grade / Premium grade: Made from dense, pure hardwoods like oak, mahogany, and tropical hardwoods. Large, uniform chunks are preferred for their long burn time and consistent, high heat. Premium grades are often double-sieved to remove smaller, messy pieces and dust. An example is FOGO Super Premium Lump Charcoal, which is made from sustainably sourced oak.
- Standard grade: Made from a mix of hardwoods and may include smaller pieces and offcuts. It generally meets lower specifications for fixed carbon and has slightly higher ash and moisture content.
- Industrial grade: Often produced from a wider range of hardwoods and fines. It may have lower carbon content and higher impurities, making it suitable for metallurgical or other industrial applications where fuel economy and consistent heat are the primary concerns.
